Smoked Trout Blinis with Crispy Sprouts
These easy blinis are perfect for when you need a speedy canape to place on the table. Made with a few good quality ingredients from the Secretts farm shop, they come together in under ten minutes, leaving you free to get on with the best part - kicking back with a glass of fizz! I used an air fryer to crisp up the sprouts, but you can achieve this in the oven or on the hob - just cook in some oil on a high heat until light, crispy and golden.
INGREDIENTS:
200g sprouts, thinly sliced
2 cloves of garlic, thinly sliced
Drizzle of oil
Drizzle of Apple Cyder Vinegar
Salt & pepper
Pack of mini blinis
227g tub of Mere Trout Smoked Trout Terrine
Bunch of chives
Juice of ½ lemon + wedges to serve
METHOD:
Place the sprouts in a bowl with the garlic and drizzle over the oil and vinegar. Season well and stir to combine.
Tip the sprouts into the basket of an air fryer and cook on the max crisp mode (240C) for 5-7 minutes until crispy with slightly charred edges.
Place the blinis on a plate and smother each one with a generous dollop of smoked trout terrine. Top with the crispy sprouts and some chopped chives.
Season and add a squeeze of lemon to finish, serving with a chilled English Sparkling as an accompaniment.
