Chocolate & Cranberry Cookies

Crunchy, sweet, light and crumbly, these festive cookies are made with a mixture of nuts, dark chocolate, sweet cranberries and maple syrup. Mixed together in one bowl, they come together in minutes and are such a great fusion of festive flavours. The perfect little bake for Santa and his reindeers!

Recipe:

  • 250g plain flour

  • Large pinch of salt

  • 1/2 tsp baking powder

  • 180g caster sugar

  • 30g light brown sugar

  • 50g maple syrup

  • 150g butter, cubed

  • 1 egg, whisked

  • 100g dark chocolate, cut into chunks

  • 200g cranberries - sliced

  • 100g mixed nuts - chopped

    Method:

    1) Heat the oven to 180C and grease/line two baking sheets with parchment paper.

    2) Add the flour, baking powder, salt and sugars to a bowl. Add the maple syrup and butter and work the mix with your hands until it resembles breadcrumbs.
    3) Tip in the whisked egg, chocolate, cranberries and nuts and stir to combine.
    4) Place spoonfuls of the cookie dough onto the baking sheets (leaving space either side for them to spread) and top with some sifted sugar. Place in the oven for 12 minutes until lightly golden. Remove to cool and enjoy!
